How we Operate
We cook entirely over fire for a curated menu that is uniquely yours.
What does that mean? Amazing flavour, intoxicating atmosphere, and off-grid accessibility creating moments to remember.
Thanks to our wonderful friends at Pig & Pilgrim we use a range of parilla style BBQs to operate with maximum versatility – where you go, we can follow. Height adjustable bases mean we protect the ground surface from radiating heat allowing us to operate on grass, gravel, wood, stone, and tile. It’s an immersive experience with a trace-free pack-down.
Available for weddings, events, corporate gatherings, masterclasses, retreats and the no-excuse-needed long lunches, every reason is the perfect reason for a feast over fire.

Chef Matty
As the Head Chef & Owner of eschalot restuarant in the Southern Highlands of NSW, Matty is a lover of food first, and chef (a close) second, bringing people a dining experience that is inspired by… well, the ingredients themselves.
With 25+ years of Mattys fine dining and catering experience, Incendia is the love child of these two cooking worlds combined. The product is Modern Australian fusion cusine bringing local produce to the forefront. Your experience becomes one of generous offerings meeting fine dining elegance – fire, fun, and elevated flavour, without the pretention.

Chef Jalah
Often your first point of contact and behind-the-scenes co-ordinator, Jalah is here to get your experience underway. A big believer in locally nutured supply, creative freedom and honouring ingredients with simple practice and love. Gardener, photographer, chef, nature-lover and eater of things, Incendia is the perfect place to get excited about bringing those elements of life together.

Layne
Forever with a smile on her face and a gaurenteed bundle of fun! Layne is an integral part of your day, a no-fail provider of warmth, energy and mindful care for your experience. From fine-dining service straight to the pub for a beer (ok… its probably more like 3 beers), she’s the perfect Incendia mix of pampered service and genuine down-to-earth connection.
Johnny
If you’d like to know anything – dare we say everything? – about fine foods (cheese, caviar, butter, wine, olive oil, balsamic vinegar… need we go on?) you have to buckle up and dive in with Johnny. Chef, connoisseur, source-story enthusiast – he puts the fine in dining… and that’s before the food has even come out.
